4. Joya del Casco, Seville

Portugal’s Shiadu resort group opened this small, simple boutique property in late 2019. Fifteen recent rooms are unfold throughout a pleasingly sharp-angled inside, and bold-coloured canvases and mustard-yellow furnishings add pops of vitality. Location-wise, it’s onerous to beat: the solar terrace and small rooftop pool look instantly onto the Giralda belltower of Seville’s mammoth cathedral. Doubles from €62 (£54), room solely. 

5. Lodge Bodega Tío Pepe, Jerez de la Frontera

True sherry can solely be made in a single particular area — the so-called ‘Sherry Triangle’ of Andalucia — and in a single nook of it, there’s a devoted sherry resort. Revered vineyard González Byass put spectacular thought and energy into changing this 19th-century bodega. A number of in-house bars and eating places use the bodega’s excellent sherry for meal pairings and signature cocktails. Doubles from €165 (£143), B&B. 

6. Parador de Trujillo, Trujillo

The hometown of conquistador Francisco Pizarro stands as one thing of an outpost, dominated by a medieval fortress. Its new parador slots cleanly into the stone construction of the previous Santa Clara Convent — a grand constructing that centres round two cloisters, certainly one of which retains its authentic Renaissance columns and arches. There’s an outside swimming pool within the courtyard and a scholarly calm prevails all through. Doubles from €80 (£68), room solely.
